"The double pyramide" positions foods not only following the criteria nutritional science has long recommended on the basis of their positive impact on health, but also in terms of their impact on the environment. The work aims to encourage the publication of further studies on the measurement of environmental impacts of food. The objective is to increase the coverage of statistical data and examine the influence that may have some factors, such as, for example, geographical origin or food preservation.
